David Guevara Armijos is a second-generation coffee farmer who has dedicated his life to perfecting his craft on a meticulously managed 3-hectare plot in La Libertad. Situated in the Jaén region at a staggering 1,900 meters above sea level, this unique terroir is an absolute paradise for specialty coffee. The combination of high humidity, extreme elevation, and remarkably fertile volcanic soil creates the perfect incubator for the delicate, highly revered Geisha varietal. Overcoming recent regional labor shortages, David and his family took to the steep hillsides themselves this season. They personally hand-selected the ripe cherries, turning the crop into a deeply personal endeavor that reflects their unwavering dedication to agricultural excellence.
To ensure this prized harvest reaches its peak potential, the family employs a rigorous, highly controlled washed process. The hand-picked cherries are first floated in fresh mountain water to remove any defects before depulping. The coffee then ferments overnight in the cool mountain weather for 12 to 24 hours — a precise microbial breakdown that unlocks the Geisha’s signature floral elegance and delicate acidity. Following a crystal-clean rinse to halt fermentation, the beans undergo a rapid “skin drying” phase on raised beds to protect their structural integrity. Finally, the parchment is moved to lined patios where the family continuously turns the coffee over 7 to 10 days, ensuring a slow, even dehydration that guarantees absolute stability for export.

Keep the bag sealed, away from direct light, at room temperature. For best results use the coffee from day 7 to day 60 after roasting. Grind fresh before brewing.
