Located in the Oromia Region’s Guji Zone, the village of Buku Sayisa represents a community where coffee cultivation is deeply intertwined with daily life and local heritage. Grown on small garden plots adjacent to family homes, the coffee thrives at a staggering 2,300 meters above sea level. This extreme elevation, combined with abundant rainfall and nutrient-rich red clay soil, creates the ultimate environment for the slow, complex development of the region’s renowned 74114 varietal. During the harvest season, over 600 family-owned farms deliver their hand-picked cherries to the local processing station, supported by a dedicated workforce of 180 employees who rigorously sort the incoming fruit for pristine ripeness.
To highlight different facets of the Guji profile, the station directs the harvest down specialized processing paths. The classic natural lots are carefully turned on raised sun beds for up to four weeks. For maximum complexity, the innovative “super natural” method employs a brief controlled fermentation followed by an ultra-slow, 30-day extended drying period, while the anaerobic lots undergo a highly controlled five-to-ten-day fermentation in oxygen-free tanks. Following a crucial resting phase, the coffee is transported to an advanced dry mill in Addis Ababa for rigorous density and color sorting. Expertly sealed in protective liners, the flawless green coffee is then securely transported for global export, reflecting a remarkable journey from smallholder gardens to roasters worldwide.
