To preserve the complex, sweet character of this exceptional harvest, the coffee undergoes a gentle Sugar Cane Ethyl Acetate (EA) decaffeination process. Partnering with Coffein Compagnie, the green beans are gently steamed to open their cellular structure. A natural EA solution — utilizing compounds found in sugar cane and fresh fruit — is then introduced to selectively extract the caffeine without stripping away the coffee’s vibrant origin characteristics. Following a final cleansing steam and careful drying phase, the result is a brilliantly clean, decaffeinated Ethiopian specialty coffee that refuses to compromise on its rich, authentic flavor.
