Located in the globally celebrated coffee region of Acevedo, Huila, Finca Anaya has been meticulously nurtured by the Aranda Gómez family for over three decades. Nestled in a lush valley between two striking mountain ranges, this highly biodiverse estate actively integrates towering guadua bamboo and native fruit trees directly into its coffee plots. This vibrant shade canopy not only supports a perfectly balanced local ecosystem but also creates a cool microclimate that intentionally slows cherry maturation, resulting in exceptionally dense, sweet seeds. Drawing on over 15 years of dedicated specialty coffee expertise, producer Sergio Darío Aranda Gómez has transformed the farm into a dynamic laboratory for post-harvest innovation, utilizing advanced sensory evaluation and experimental techniques to unlock highly expressive cup profiles.
To maximize the immense potential of this rare Sidra varietal, Sergio employs a highly controlled, wild yeast-driven anaerobic natural process. Following a rigorous manual harvest and pristine water sorting, the whole cherries undergo a deliberate period of open-air oxidation to kickstart natural microbial activity. The fruit is then sealed in oxygen-free tanks and inoculated with indigenous wild yeasts, fermenting at a strictly controlled 30°C for 96 hours to dramatically amplify the varietal’s aromatic complexity. Afterward, the heavily fermented cherries are gently sun-cured over 15 to 20 days to preserve their delicate cellular structure and lock in deep natural sweetness. A final resting phase in a climate-controlled environment perfectly stabilizes the coffee prior to export, guaranteeing rock-solid structural consistency and a flawless cup.
