This Red Bourbon comes through the Fellows Farms project of Inmaculada Coffee Farms, the estate the Holguín family planted in 2010 in Pichindé, a rural district of Cali, Colombia. Inmaculada buys ripe cherries from smallholder partners in neighbouring Cauca, in El Tambo, Piendamó and Caldono, and processes them at its own mill, paying premiums for quality.
Inmaculada made its name with rare varieties and precise processing: in 2021 Matt Winton won the World Brewers Cup with a natural Eugenioides from the farm, a coffee species few people ever get to taste. The Fellows Farms project, launched in 2022, brings the same know-how to neighbouring growers, along with training in picking only fully ripe cherries.
This specialty coffee is honey processed: after pulping, part of the sticky mucilage is left on the beans as they dry, which adds sweetness and a silky body. Kumquat marmalade and mango lead, a light floral note follows and brown sugar rounds everything off with a mellow sweetness. As a filter coffee it is bright and zesty, with the kumquat to the fore, and as an espresso it is smooth and sweet, a sunny everyday cup that works just as well with milk.
Your order is processed and shipped within 1–2 working days. Delivery takes 1–2 working days in Portugal and 3–5 in the EU.
Free shipping for orders over €40.
Keep the bag sealed, away from direct light, at room temperature. For best results use the coffee from day 7 to day 60 after roasting. Grind fresh before brewing.
We do not cut costs on green coffee, and we try to work with the same producers and importers season after season. If you want to know what we paid for a lot or how it scored on the cupping table, ask us: we are glad to share.
