Anai Dalila manages 2 hectares of land with her husband Arturo.
Anai has 4 hectares dedicated to growing various coffee varieties – Bourbon, Caturra, Geisha, Catuai, Pache and Catimor. Her farms situated in La Libertad’s San Ignacio district have ideal conditions for quality coffee production, including relatively high humidity, altitude and fertile soil.
Due to a shortage of pickers locally, Anai’s family harvests the cherries themselves throughout the season. They have experimented with different fermentation techniques over recent years.
After hand picking, the family removes floaters. Then the cherries ferment in plastic bags for 36-48 hours and finally are moved in the drying section for 25-30 days.
