Nestled within the lush green valleys of Kirinyaga county, the Thunguri factory stands in a region renowned for its fertile, red volcanic soil. At an altitude of 1,700 to 1,800 meters, this is where 1,500 dedicated farmers cultivate coffee on small, half-hectare plots, often alongside crops like macadamia, tea, and bananas. Year after year, their collective effort results in consistently exceptional coffees.
​The journey from cherry to cup begins with meticulous care. Farmers handpick their coffee and deliver it to the factory, where the process immediately begins with pulping. Using water channels, the dense, high-quality beans are separated from the less mature “floaters,” ensuring only the best coffee moves on to the next stage.
​What follows is the hallmark of Kenyan processing: a careful, multi-stage fermentation. The beans first rest in a fermentation tank for around 24 hours before being washed and transferred to a second tank for another 12-24 hours. But the true secret to the region’s distinct flavor profile is the final step: a long soak in clean water for up to 24 more hours.
