About origin:

El Encanto is a testament to a family’s bold vision. Shaded by a dense canopy of native fruit trees, this generational farm made a radical decision: they uprooted their traditional crops to make way for rare, exotic cultivars like Geisha, Java, and the highly unusual Bourbon Ají.

Their goal? To master the art of experimental fermentation and unlock mind-blowing flavor profiles.
​This specific Bourbon Ají lot is a masterclass in innovation. By utilizing a complex, custom co-fermentation, Franky Hoyos and his team push sweet, candy-like aromatics to the absolute limit:

  • The Build-Up: After hand-picking the ripest cherries, the whole fruit rests in bags for 70 hours, kickstarting a deep, foundational sweetness.
  • The Deep Dive: The cherries are repulped and moved into oxygen-free tanks for 60 hours of anaerobic fermentation to build intense, complex fruit definition.
  • The Magic Touch: The fermentation is locked in with a rapid thermal shock. Then, the batch is inoculated with a custom blend of strawberry pulp and cacao-based yeasts. This is the secret behind the coffee’s wild, signature “banana bubble gum” and blueberry notes.
  • The Cool Down: The coffee is carefully dried mechanically for 48 hours, then left to rest and stabilize for 15 days. This allows those wild, exotic flavors to perfectly integrate before milling.
