About origin:

High in the Hambela Wamena district of Ethiopia, at an impressive altitude of 2,350 meters, Esayas Beriso cultivates Boku, a coffee centered around the local 74158 variety, which is renowned for its exceptional cup quality.
​Esayas’s path to becoming a dedicated coffee farmer was a journey of passion. He began his career in a government office, entering the coffee world gradually alongside his brothers by collecting cherries from neighboring farmers. As their venture grew, Esayas planted his own trees and, in 2009, made the pivotal decision to leave his government post to commit fully to coffee.
​Today, this is a true family operation. Esayas’s wife, Meskerem, plays an essential role, managing the harvest and overseeing the purchasing of cherries from their community. It’s this hands-on approach that defines their work and their partnership with the exporter SNAP.
​This particular lot showcases Esayas’s skill with the Anaerobic Natural process. After a meticulous selection of only the best cherries, the coffee is placed in dry, shaded barrels to ferment for a controlled 72-hour period, a stage that Esayas closely monitors himself. Once this crucial fermentation is complete, the cherries are moved to shaded beds for a slow, careful drying, locking in the unique character developed through his expert touch.
