About origin:

​For over 30 years, Finca Las Flores has been a family legacy in the world of coffee, founded by Edilberto Vergara and Nubia Ayure. Today, that legacy is being redefined by their sons, Johan and Diego, who have infused the farm with a new spirit of innovation, positioning it as a benchmark for excellence in specialty coffee.

​Taking the reins of the family farm, the brothers have dedicated themselves to pushing the boundaries of what coffee can be. With a stunning collection of high-quality varietals like Gesha, Pink Bourbon, and Tabi, they have the perfect canvas for their artistry. Diego masterfully manages the farm’s production, fermentation, and drying to ensure impeccable quality, while Johan focuses on experimentation and sharing their incredible coffees with the world.

​This lot showcases their pioneering “Double Thermal Shock” process, a method of incredible precision and control. The journey begins by selecting only the ripest cherries, with a high sugar content of 24-28° Brix. The process involves:

​- An initial thermal shock to begin the unique fermentation.
– ​A complex, multi-stage fermentation lasting 96 hours (60h anaerobic, 12h oxidation, then 24h submerged anaerobic).
– ​A second thermal shock post-fermentation, heating the cherries to lock in the developed flavors.
​Finally, the coffee is dried with meticulous care using modern dehumidifiers for 60 hours. This highly technical and innovative approach is a testament to the Vergara brothers’ passion, blending family tradition with the future of specialty coffee.
