Chabela is not just a coffee - it is a testament to a legacy of innovation in Chiapas, Mexico. Produced by a pioneering exporter founded in 1980, this company holds the distinction of being the first decaffeinator in Latin America. For over four decades, they have utilized the best technology in the industry to perfect the art of removing caffeine without sacrificing flavor.
Beyond their technical expertise, this producer is defined by a rigorous code of business ethics. They view their work as a comprehensive strategy where commitments are made to every key stakeholder - from the employees and shareholders to the local community and the environment. This holistic approach ensures that every cup of Chabela supports a sustainable and respectful supply chain.
The resulting coffee showcases a patented water-based decaffeination method. This chemical-free process is designed to preserve the bean's original characteristics while achieving a purity level that few can match - the Water-Based Decaffeination Process:
- Analysis and Preparation: The process begins with a rigorous analysis to determine the optimal conditions for the specific beans. The green coffee is then steamed or prepared to open the beans' pores, making them ready for extraction.
- Water-Based Extraction: Using a method patented in 1987, the beans are submerged in water. This water acts as a natural solvent, gently extracting the caffeine while leaving the coffee's flavor compounds (oils and solids) intact.
- Filtration (>99% Removal): The water is passed through advanced filtration systems to remove the caffeine molecules. This cycle is repeated until the coffee achieves a caffeine removal rate exceeding 99%, a standard of purity that ensures a restful cup.
- Drying and Polishing: Finally, the decaffeinated beans are carefully dried and polished to restore them to their stable export moisture content, ready to be roasted.

Keep the bag sealed, away from direct light, at room temperature. For best results use the coffee from day 7 to day 60 after roasting. Grind fresh before brewing.
We do not cut costs on green coffee, and we try to work with the same producers and importers season after season. If you want to know what we paid for a lot or how it scored on the cupping table, ask us: we are glad to share.
