Fresh off the boat straight in to your brewing devices – prime example of Ethiopian anoxic processing: sweet raspberry and black grape fusion, bordering on the bubblegum, is balanced with gentle ozonic violets and smooth gourmand base layer of vanilla. Impactful!
About origin:
Located in the heart of the Oromia Region’s Guji Zone, the village of Buku Sayisa represents a tight-knit community where coffee is intertwined with daily life, household income, and local heritage. Here, coffee is traditionally cultivated on small garden plots adjacent to family homes. The region boasts a staggering elevation of up to 2,300 meters above sea level. Combined with abundant annual rainfall and fertile, well-draining red clay soil, this terroir creates the ultimate environment for the slow, complex development of the renowned 74114 coffee varietal.
During the harvest season from October to December, over 600 family-owned farms deliver their hand-picked cherries to the Buku Sayisa processing station. Operating with a dedicated local workforce of 180 employees, the station rigorously sorts the incoming fruit for pristine ripeness before directing it down one of three specialized processing paths to highlight different facets of the Guji profile:
Once the coffee reaches its ideal moisture content, it rests in a well-ventilated environment for several weeks to stabilize. The dried cherry pods are then hulled and the coffee is transported to a specialized dry mill in the Germent area of Addis Ababa.
At the capital, the green coffee undergoes rigorous final preparations: it is meticulously sorted by density, screen size, and color to remove any remaining defects. After reference samples are pulled for quality documentation, the flawless green beans are sealed in protective Ecotact liners and traditional jute bags. The coffee is then loaded onto monitored convoys driven by certified professionals, traveling to the Mojo dry port before making its final rail journey to Djibouti for global export.
