Wilton Benitez, a trained chemical engineer turned coffee pioneer, channels his scientific expertise into Granja Paraiso 92, a family-operated estate in Colombia’s Cauca region. Designed as a cutting-edge agricultural laboratory, the farm utilizes highly innovative cultivation systems—including terraced planting, precise drip irrigation, managed shade canopies, and exact nutritional calculations. Equipped with its own advanced microbiology and quality labs, Granja Paraiso 92 leverages this infrastructure to cultivate exceptional varietals like this prized Yellow Bourbon. Furthermore, their deep commitment to environmental sustainability is reflected in their specialized eco-friendly drying technology, which operates entirely without fossil fuels to eliminate greenhouse gas emissions.

This unwavering scientific rigor defines their groundbreaking approach to post-harvest processing. The coffee undergoes a meticulous initial selection and sterilization phase before entering state-of-the-art bioreactors for a primary anaerobic fermentation. Here, specific microorganisms are introduced while temperature, pH, and Brix levels are strictly monitored to develop targeted aromatic compounds. After pulping, the coffee completes a secondary fermentation phase. To permanently lock these highly complex, newly developed characteristics into the beans, Wilton employs a signature thermal shock technique—a rapid sequence of hot and cold water washes that expands and contracts the cellular structure. The result is a profoundly unique, consistently brilliant cup that stands at the absolute forefront of global processing innovation.
