To preserve the complex, sweet character of this exceptional harvest, the coffee undergoes a gentle Sugar Cane Ethyl Acetate (EA) decaffeination process. Partnering with Coffein Compagnie, the green beans are gently steamed to open their cellular structure. A natural EA solution \u2014 utilizing compounds found in sugar cane and fresh fruit \u2014 is then introduced to selectively extract the caffeine without stripping away the coffee\u2019s vibrant origin characteristics. Following a final cleansing steam and careful drying phase, the result is a brilliantly clean, decaffeinated Ethiopian specialty coffee that refuses to compromise on its rich, authentic flavor.<\/p>\n
